Smoked Honey Lemonade

A refreshing smoky beverage that is perfect on a hot summer day! Enjoy as a lemonade on its own, or pair with your favourite local whisky to enhance the flavour.

Ingredients

  • 12 lemons
  • 1/2 cup Kinghaven Lemon Meringue Creamed Honey
  • 1/2 cup water
  • 3 cups club soda or lemonade

Instructions

Step 1

Start by preheating your pellet grill to smoke mode, around 250 °F.

In an aluminum pan, or grill-safe container, combine the Lemon Meringue Creamed Honey and water.

Allow the water and honey mixture to smoke for 45 minutes-1 hour until it becomes a thick simple syrup. Remove from the grill and set aside to cool.

Step 2

Increase the grill's temperature to 400°F.

Cut all of the lemons in half and place the cut side down directly over the flame broiler.

Allow the lemons to grill for 5 minutes, or until they have deep grill marks. Remove from the grill and allow to cool for 5-10 minutes.

Step 3

Juice the lemons until you have about 2 cups worth of juice.

In a pitcher, combine the simple syrup and lemon juice. Stir to combine.

Step 4

Top off the lemonade with sparkling water or club soda.

Chill until ready to serve. Pour over ice and enjoy!

Notes & Tips
