Root Vegetable Salad with Burrata and Honey Balsamic Dressing
This recipe combines vibrant, roasted vegetables with creamy burrata and a tangy honey dressing for a delicious and visually appealing salad.
Ingredients
- 3 red beets, trimmed and peeled
- 6 carrots, peeled
- Olive oil
- Salt and pepper to taste
- Burrata cheese
- 3 tbsp olive oil
- 2 tbsp white wine vinegar
- 1 tbsp Kinghaven Raw honey
- 1 garlic clove, minced
- 1 tsp fresh basil, finely chopped
- Salt and pepper to taste"
Instructions
Preheat Oven:
Preheat your oven to 400°F (200°C).
Prepare Vegetables: Cut the beets and carrots into rough cubes (or roll cut) and toss with olive oil, salt and pepper. Arrange the beets and carrots as a single layer in oven safe pan or dish. Roast for 30 minutes, or until tender and caramelized.
Make the Dressing:
In a small bowl, whisk together olive oil, white wine vinegar, raw honey, minced garlic, basil, and a pinch of salt and pepper.
Assemble the Salad: Once the vegetables are done roasting, let them cool slightly. Combine the roasted beets and carrots. Drizzle the dressing over the salad and mix until combined.
Dress and Serve:
Drizzle additional honey and add basil for colour. Serve immediately and enjoy!
