Oi Munchim with Sesame Honey Vinaigrette

Welcome back for Part Two to our hot weather series we kicked off last week with our recipe for fresh Thai spring rolls with honey Hoisin dipping sauce  made in collaboration with Haley Regan (@o_4forksake).  This week we're bringing you the perfect, crispy and refreshing addition to go along with our fresh spring rolls.  This take on Oi Munchin (i.e. spicy Korean cucumber salad) brought to you by Haley features a delicious blend of sweet, savoury and spicy that will add some extra zing to your party platter without breaking the bank!  Give it a try and leave your experience in the comments below! First thing, go to your pantry and grab:

Red wine vinegar, sesame oil, Kinghaven Farms Premium Raw Honey, red pepper flakes, Korean cucumber (or alternately: Kirby, Persian, English, or Japanese cucumber), red pepper, red onion, and (optional) Kimchi.

In a bowl, whisk together:

1 tsp Kinghaven Farms Premium Raw Honey

1/4 cup red wine vinegar

½ tsp sesame oil

1 tsp red pepper flakes

Now add:

4 cups thinly sliced cucumber

Handful diced red pepper

Handful diced red onion

Serve cold or room temperature

Haley's Do’s:

  • For some added colour and heat, add Kimchi.
  • This is more a side than a salad, and makes for a colourful addition to your dinner spread.
  • Great for picnics or traveling meals as it does not have to be heated and can be room temp.
  • Great served alongside the fresh Thai spring rolls (see link above).
