Raw Honey Glazed Carrots

For our veggie lovers out there check out this great entrée for one or generous sharing plate for the whole family to enjoy.  Brought to you by Haley Regan (@o_4forksake), check out these amazing Kinghaven Farms Premium Raw Honey Glazed Carrots.  Light and tangy, this dish will make you think of Springtime as the understated natural sweetness of the carrots is brought to life by the mint greek yogurt topping and honey glaze.  Bon Apéttit!   

First up: you need these things for this recipe – so go to your fridge/pantry and grab:

A bunch of carrots (at least 4 or 5), tops still on, mint, pomegranate seeds, olive oil, Kinghaven Farms Premium Raw Honey, 1 lemon, plain Greek yogurt, 1 stalk green onion

Preheat oven to 400 degrees F 

Trim the greens off the top of the carrot, wash and place on foil covered baking sheet

Using a brush, coat the carrots in a mixture of 2 tsp olive oil and 2 tsp raw honey

Roast for 25 minutes

While carrots in oven, combine:

2 tbsp plain Greek yogurt

1 tbsp raw honey

The juice of half a fresh lemon

1 stalk green onion, sliced

Mix well and set aside

Chop 8-10 mint leaves roughly

When carrots are done, plate by first lining up carrots in same direction, then spoon on yogurt mix in centre, and garnish with chopped mint leaves and pomegranate seeds

  • This works really well as a side dish in a family style dinner – think Easter or Mother’s Day - or just a dinner party celebrating absolutely nothing except great company.
  • If you are like me and panic at the prospect of a vegetarian coming for dinner – this is a great option as there are multiple food groups represented here. Plus it is stunning and very original!
